Rosemary’s Bakery, founded in 1946 by John Bacco. Rick Collier who worked with John in 1981, bought the bakery in 1983 until closing in 1997. After 27 years of being closed Rick along with his wife Linda reopened the bakery to a warm reception from Watertown. After about 9 months they needed to close due to personal reasons. That's were the Capasso's come in.
Nicole Capasso had been the head baker at SoNo Baking Co for the past decade, was looking to open a spot of her own alongside husband James Capasso. After stumbling across an article about Rosemary's closing again everything seemed to align that this was the place for them.
With Nikki's 21 years experience, in the food industry ( mainly breads ) and Jimmy's experience in a little bit of everything, we hope to bring a new school twist to the old school classics and keep the tradition of Rosemary's alive, while bringing in some new favorites.
